Chapter 32 “Tammy seasoned the chicken and put it in the oven…”
Because they are in an unfamiliar cabin to Tammy, she has to use what she’s got on hand. So this recipe is what I had in mind when I wrote this chapter. It’s one I’ve used many times in my own kitchen and is a favorite with my family. You most likely have these ingredients in your cupboard and shouldn’t need to go shopping for anything special. If you don’t have a spice or herb, do what I do, substitute! Make it your own.
Dad’s Chicken Seasonings and Rub
1 tsp salt
1/2 tsp black pepper
1 Tbls garlic blend (I always have on hand Costco Garlic Plus)
1 Tbls chopped garlic
1/2 tsp smoked paprika (the guys in my story love their hot seasonings – my smoked paprika is Simply Organic brand but any will work)
2 Tbls Teryaki Sauce
1Tbls white vinegar
1/2 cup brown sugar
1/4 cup water (want it smooth but not watery)
Preheat oven to 375F .
Pat chicken pieces dry with paper towel, rub with oil (I use olive oil). Grease pan you’ll be cooking the chicken in and set aside. Blend your seasoning mix and rub on chicken, placing the pieces into the greased pan.
Cover the chicken with foil for first 20 min of cooking then last 20 min uncover lower tempeture to 350F. Rotate chicken half way through cooking so all sides get cooked evenly and pieces are crispy.
If you use the airfryer you cook the chicken pieces at your normal airfryer settings, rotating pieces as normal.
Let stand 5 min then serve and enjoy! Goes great with garlic seasoned red potatoes and parmesan/garlic baked green beans.

Another recipe I thought you’d like is from Chapter 36 “We go home and have a cup of tea. And I think I need muffins, blueberry ones.” She was off back up the path, not even waiting for Tammy to follow.
When Sara wants blueberry muffins she goes and makes them in Chapter 37. This is a family recipe I use and love. I’ve made it my own by added a streusel topping but you don’t have to add that, just the muffins are yummy by themselves.
Grandma’s Blueberry Muffins with Streusel topping
Muffin mix:
2 1/2 cup flour
1 Tbls bk powder
1 tsp bk soda
1/2 tsp salt
1/2 cup butter melted (you can substitute with vegetable oil)
1 cup white sugar
2 Lg eggs
1 cup milk
1 Tbls vanilla
1 1/2 cups blueberries
Streusel topping:
1/4 cup white sugar
1 Tbls flour
1/8 tsp each of ground cinnamon, ground clove, nutmeg (optional)
2 tsp butter, melted
Preheat oven 375F. Grease muffin pan.
Prepare streusel topping and mix together ingredients in small bowl, set aside.
In large blow add dry ingredients together end blend well. In seperate bowl or a 6 cup measuring cup mix wet ingredients. Add blueberries to dry ingredients (I find that the batter doesn’t change color as much when mixing frozen berries with the dry first), mix then add wet ingredients and mix till combined.
Put batter into each cups filling till top of pan, then sprinkle the streusel mix on top of each muffin. Put in oven and bake 20 min or until a toothpick comes out clean from center muffin.
Cool the muffins for about 10 min, serve and enjoy!
